What are non-pareil sprinkles?

Non-pareil sprinkles are small balls of confectionary made of sugar and starch. These come in an assortment of bright colours, or even metallics. You will find these stick best to wet icing, buttercream, fondant or icecream.

What are they like when baking?

Non-pareils can bleed colour or dissolve if mixed into hot liquid or heavy batter.

Why are they also called "Hundreds and Thousands"?

These are usually called Hundreds and Thousands because of how tiny they are, and in large quantities it looks like an endless amount of sprinkles. Funnily enough, the term matches an old saying for a huge, vague number.
